The fruit goes straight to the press, where the juice sits for 24 hours. Then it is racked and separated from its gross lees and fermented clean at low temperatures in stainless steel tanks, ensuring multi layers of aromas and flavors. Gritty, oily, nutty aromas lead to a tight citric palate. Salty narrow flavors of passion fruit and grapefruit finish steady and briny.
