WhaleHaven Sandstone Strata Chardonnay 2021 Redbreast Palate: An explosion of breathtakingDESCRIPTION From north facing slopes in the Upper Hemel en Aarde Valley, this 2020 Chardonnay captures the maritime freshness and sandstone depth that define the regions finest whites. Sourced from CY5 clone vines rooted in Longlands and Avalon soils interlaced with fine Table Mountain sandstone and 15% clay, the grapes were handpicked in early March, chilled overnight, and whole bunch pressed to 1 bar. Fermented with Lallemand ICV D21 yeast in barrel
