Dubois et Fils, Bourgogne Hautes Cotes de Nuits White 2022 Pinot Noir Macabeo (25%)100% Chardonnay from 0. 8 hectare, 10 years old vines of Hautes Ctes, located in parallel to the Cte, cover the slopes well faced of hills at a middle altitude of 300 to 400 meters. The soil is clayey and chalky. The grapes are first pressed in order to extract the juice, which is placed in a vat for a static racking of the must. The clear juice is lodged in barrels and in vat where it will be sowed in yeast to start off the alcoholic fermentation.
